Room one

Beans

Everything downstream depends on this bag. Buy whole beans from a roaster who prints the roast date, drink them within a month, and keep the bag closed. That is most of the secret.

Two bags to start: one for the morning, one for after dark.

Room two

Grind

Grind right before you brew. A burr grinder makes every particle the same size, so every particle gives up the same flavor at the same time. That is the single biggest upgrade in home coffee, and nobody believes it until they taste it.

Room three

Water

A cup of coffee is about 98% water. Tap water that tastes fine still changes from street to street and season to season, and it shows up in the cup. A kettle that pours exactly where you point it makes the rest repeatable.

Room four

Brew

Three doors. Pick the one that matches your mornings, not the one that photographs best. Each of these is made by a company that only makes this kind of thing, and ships from them.

Origami porcelain dripper

Door one · slow mornings

Pour-over

An Origami porcelain dripper and a paper filter. Four minutes of attention, the clearest cup of the three, and nothing to plug in.

Bonavita Connoisseur 8-cup drip brewer

Door two · a pot for the house

Drip

The Bonavita Connoisseur, an 8-cup brewer certified by the Specialty Coffee Association. Press one button; it holds the right temperature the whole way.

Door three · the ritual

Espresso

ROK's EspressoGC: two levers, hot water, no pump, no circuit board. A 25-second pull you feel in your arms, and a machine that will outlive the appliances around it.

Room five

The morning

The whole house on one list. Pick your door and the total updates; one tap puts all of it in a cart at the ShopCoffee store, each piece shipped by the company that made it.
